Our story

Established in 2013, the Casse-Croûte bistro has been at the forefront of the culinary revolution in Bermondsey Street.

Central to the Casse-Croûte philosophy is authenticity, respect for technique, tradition and recipes all born out through a love of the time-honoured craft. Sylvain Soulard's exceptional French cooking remains true to its roots, without leaning into each and every restaurant trend: that's one of the keys to its popularity and longevity. Over the past 10 years, he has let the food do the talking, helping to make this small bistro such a one-of-a-kind London institution.

Casse-Croûte is as Gallic as it gets - and delightfully so: gingham tablecloths, bistrot chairs, vintage aperitif posters and embossed fleur-de-lis wallpaper. It exudes an idealised Parisian vibe, only with perfect service and smiles all the way.

The Chef - Sylvain Soulard

Originally from Normandy, Sylvain Soulard Casse-Croûte co-founder and head chef worked previously for Morgan Meunier - for twelve years at Morgan M, and at Michelin-starred Monsieur Max in Hampton Hill.

Sylvain also heads their sister restaurant Pique-Nique, a stone's throw from Casse-Croûte.

His daily-changing menu has always been seasonality-driven, long before it became a claim. Since the beginning, the produce he's sent from his faithful suppliers dictate what's going to be written on the blackboard each day: 3 starters, 3 mains, 3 desserts. Simplicity at its best.

The Maitre d’ - Alex Bonnefoy

Originally from Marseille ,Casse-Croûte Maitre d and co-founder Alex Bonnefoy worked previously in London at The Arts Club Dover St, at Michelin starred Viajante and Hakkasan where he gathered a great understanding of the management of the front of house and the wine world.

Alex’s considerable expertise has been instrumental in the curation of a drink list with exclusively French products, including a collection of well renowned old classics. The Casse-Croûte wine list is selected purely of French wines from small and organic producers.

Alex also heads up their sister restaurant Pique-Nique.
